So I am on a laptop right now, without a mouse. which means I don't have that fancy little scrolling wheel to switch between different shapes on any particular substance.

Is there a way to get different triangles and pillars of stone or dirt without having a mouse? Is there a button on my keyboard I can click on or something?

Pretty sure you can press F1 for help and it describes the keys you can use instead of the mouse wheel.

If not it's , and .  In other words, the < and > keys without holding shift.

Yes, those keys are supposed to work exactly like the mouse wheel, everywhere.  I think the exception is the map where +/- zooms in and out.
