What is the point of "Manage Labels" and how do you use them?

When you click on "My Messages" on the sidebar "Preferences" in the middle it says "Manage Labels" click on it, and the second table "Add new label" add a new one, then a new sidebar table pops up above "Preferences" called "Labels" and there are a list of the labels you have made. i don't understand what the labels are
